For this recipe it is highly recommend using fresh, ripe tomatoes. You can try with other types of tomatoes but make sure that they’ll have the sweetest flavor (not sour) to get the best tasting soup.
Ripe Tomatoes - 1/2 kg
Carrot - 1 to 2
Small Onions - 5 to 6
Bay leaves - 1
Cloves - 2 to 3
Cinnamon - 1"
Garlic - 2 to 4
Turmeric powder - 1/4 tsp
Red chili powder - 1 tsp
Salt - As per taste
Pepper powder - 1/2 tsp
Toasted bread - For toppings
Roughly chop carrots, small onions and garlic.
Pressure cook tomatoes, carrot, small onions, garlic, bay leaves, cloves, cinnamon and 1 cup of water for 1 whistle.
Discard the spices an make puree. Strain the puree to discard the seeds and any chunks.
Boil the puree with turmeric powder, red chili powder and salt.
Once it comes to boil simmer for 15 - 20 mins.
Top with croutons ( toasted bread) and pepper powder.
Use ripe tomatoes to get sour tangy flavor.
Carrots are used to get the bright color.
