Ragi Puttu

Puttu is a popular steamed rice cade recipe made with the help of puttu maker. This is a famous Kerala speciality usually served for morning breakfast. There are several ways it can be consumed, the most common and popular way of consuming puttu recipe is serving with kadala curry. It is also served as a dessert combination with ripe banana. It is a popular combo and many prefer to eat this way. I personally love this combination to eat.


The recipe is prepared with a specific device called puttu maker which is a cylindrical tube attached to a steamer or pressure cooker. The alternative way is using a idli steamer by making a potly.


Stuff the grated coconut and the flour in the tube tight and firm so it holds the shape of the tube while removing from tube. Also make sure to begin and end with coconut that enhances the flavour.


 


INGREDIENTS :

Ragi flour - 2 cups

Water - 1 cup

Grated coconut - 1 1/2 cups

Jaggery powder - 1 cup

Banana


METHOD :

  1. In a bowl mix ragi flour by gradually adding water. The consistency to aim for is till you can break the ball which you make.

  2. Puttu maker: In the puttu maker, alternatively add grated coconut, mixed flour pack it tight. In the pressure cooker add water, and close it without pressure. Instead of whistle keep the puttu maker. Allow to steam for 10 mins.

  3. Idli cooker: Make a potly of the flour and steam cook it for 10 mins.

Serve it with jaggery and banana or with kadala curry.


TIPS :

  • Add more grated coconut to enhance the flavour.

  • Instead of adding sugar, add jaggery powder that is healthy.
