Chicken Cutlet

Cutlet recipes are a favorite among everyone. Chicken cutlet is also referred to as chicken patties. The patties are crunchy and juicy turns out to be a great snacks. The crispy feel which you find at every bite of the patties beneath the fluffy buns would be an awesome homemade burger. The recipe goes with chicken being cooked with onions and mixed with boiled mashed potatoes along with some herbs and spices which gives a delicious taste to the cutlet. These chicken cutlets are made into a round shaped and flattened, then dipped in egg wash and coated with breadcrumbs and shallow /deep fried. These chicken cutlets taste best by eating them plain or by having them along with ketchup.

COOKING TIME : 1 hr 20 mins

TOTAL TIME : 1 hr 30 mins


INGREDIENTS :

Patties :

Chicken keema - 1/2 kg

Onion - 1/2 kg

Potato - 1/2 kg

Salt - to taste

Ginger garlic paste - 1 tbsp

Pepper Powder - 2-3 tsp

Garam masala - 1 tsp

Turmeric powder - 1 tsp

Green chilli - 5 (optional)

For binding :

Breadcrumbs

Egg -10


METHOD :

  1. Wash the chicken keema or minced chicken in running water. Strain excess water using strainer.

  2. Meanwhile, pressure cook potato for 3 whistle. Once cooled down peel the skin and mash the potatoes.

  3. Finely chop onions and chilli.

  4. In a tawa add oil and saute onions till it is translucent.

  5. Saute ginger-garlic paste for 1 min to the onions.

  6. When aroma of the ginger garlic paste comes add in the strained chicken keema is added to the onions. Allow it to cook without water as chicken releases water.

  7. Once the water is drained add in the chilli, garam masala, pepper powder, salt and turmeric powder. And give a good stir.

  8. Finally, the mashed potatoes are added and combined well.

  9. When the mixture comes to bearable heat, a little portion of the mixture is taken and made into small patties.

  10. In a bowl beat up the egg and in another bowl take breadcrumbs. Breadcrumbs can be made in home buy toasting bread and grind them coarsely in mixer.

  11. Give double coating by dipping them in egg and then in breadcrumbs. This helps as a binding agent.

  12. These can go to refrigerator for 20 mins.

  13. In a kadai pour oil and shallow fry the patties until u get golden brown colour.

Serve hot with sauce.

TIPS :

  • Patties can be made before hand and coated. Refrigerate these patties for nearly 2 days. This may lessen your time for party.

  • Instead of chicken keema, we can pressure cook chicken for 3 whistle and shred the chicken and in the cooking process.

  • Patties can be used in stuffed into the bun as burger.

  • Chillies are optional. keeping kids in consideration have skipped them.
